This review describes and discusses the structure, biosynthesis applications of exopolysaccharides from lactic acid bacteria. These substances are classified as homopolysaccharides, which synthesised sucrose through action extracellular glycosyltransferases or heteropolysaccharides, repeating unit precursors formed in cytoplasm assembled extracellularly by sequential addition nucleotide sugars.
